When a fellow 'recipe friend' was asking about corn sold at a local fair by a hispanic family, smeared with mayonnaise and sprinkled with 'something' I had to do some research to see what it was. Growing up as a child in Iowa I ate MORE than my fair share of corn but I had never heard of spreading it with mayo. It seems this is a Mexican favorite of street vendors and is highly recommended. I'm placing a copy of one of 'many' recipes available so I can make it next month when our 'summer' weather is here.


3 T mayonnaise
2 t fresh lime juice
2 T finely grated Cotija (Mexican Parmesan) cheese
1/2 t Anejo chili powder
1/4 t ground red pepper
1/4 t ground cumin
1/8 t salt
4 ears corn, shucked
Cooking spray

Prepare grill. Combine mayonnaise and juice in a small bowl. Combine cheese and next 4 ingredients (through salt) in another small bowl. Place corn on a grill rack coated with cooking spray. Grill corn 12 minutes or until tender, turning frequently. Remove corn from grill; brush with mayonnaise mixture, and sprinkle with cheese mixture. Serve immediately.Print Friendly and PDF
