Beef Fajitas... using pre-cooked beef fajita strips to save time



Whats For Dinner?  I generally do a #WhatsForDinner hashtag on Twitter every day to give my followers and anyone searching for that label some ideas by sharing what we are having.  The thing is, you don't have to invest hours in cooking a meal that is going to get you rave reviews or kids and spouses asking for seconds (or thirds).   Sometimes, on busy days, when you don't feel like cooking or you just don't know what to make, it's so great to start with a basic prepared product and just add to it to come up with a fabulous meal.

This is what I did last night.  Beef Fajita's anyone?  Starting with store bought fajita seasoned beef strips (YES you can use chicken instead - of course!) I simply heated the fajita meat with yellow, orange and green bell peppers along with some onion.  I added 'more' seasoning by choosing some random spices from the cupboard;  fresh cracked black pepper, cumin, chili powder and cayenne.  While this heated I whipped some homemade guacamole and some Spanish Rice and black beans.  Dinner was ready from start to finish within 25 minutes.

When you have leftover cooked chicken or steak, fajitas are an excellent way to use up the meat or poultry for a great meal the next day... but if you don't want to cook from scratch or don't have leftovers - don't feel guilty for using frozen pre-cooked products!  In this day and age sometimes we are all too busy not to.
