SNACKS and LIGHT LUNCHES
String cheese! Cut two sticks into 3/4" pieces and snack on them or eat it in strings.
I got this one from the 3 Fat Chicks site - I never thought of this! Love it! - Mock vanilla ice cream. Use a blender or food processor to turn non-fat cottage cheese to a creamy consistency. Add a drop of vanilla and zero-carb sweetener to taste. Freeze, stirring every 15 minutes or so, until it is just beginning to harden.
Shrimp cocktail - cocktail sauce is allowed on Stillman's in small quantities.
3 Fat Chicks Version of Chicken Salad. Blend a hard boiled egg, enough water to make it the consistency of salad dressing, seasoned salt, a pinch of celery seed and a bit of garlic powder. Mix in a splash of vinegar and a little bit of zero-carb sweetener to taste. Cut cooked chicken or turkey breast into cubes, add the egg mixture and serve.
Chicken Salad: 1 1/2 cups diced, cooked, cold chicken in a bowl. In a blender, mix about 1/2 cup cottage cheese, 1 1/2 t rice wine vinegar, dash of salt & pepper, dash of garlic powder, dash of lemon pepper and optional teaspoon capers. Blend on low til creamy and smooth. Mix into chicken. Chill before eating.
Cheese balls: Mix cottage cheese and grated parmesan with a bit of salt and 1-2 T dried, crumbled bacon pieces (the kind you buy in a bag at the store - real bacon pieces - as they are more dehydrated and do not have the fat content home cooked does). Chill the mixture for a couple hours until you can form balls with it. Roll in more parmesan or snack on as is.
Hard boiled eggs sprinkled with salt or dipped in a bit of cocktail sauce.
Cottage Cheese Pudding: 2 cups of cottage cheese with 3 beaten eggs, 1 t vanilla, 2 T sweetener equivalent, dash of salt and optional cinnamon if you prefer it taste like 'rice pudding'. Bake at 325 for about 45 minutes. Let cool 5-10 minutes and serve.
Cottage cheese with dry, store bought real bacon pieces sprinkled in. (If you make your own, you have to be very careful to cook so all the fat drains off, cook completely done and crisp, and then pat dry with paper towels to remove any remaining fat/grease).
Broil shrimp under the broiler (or grill on skewers) briefly until done. No oil or butter though! You can dip in cocktail sauce.
