The last two mornings I've taken our puppies out, I've been greeted with a chill in the air and a hint of red in the leaves of the woods behind our property. Autumn is in the air and with it comes a wonderful breakfast... brunch... dessert... coffee cake. Whether you enjoy coffee or not is no matter, this cake is delicious all on its own!
Cinnamon Swirl Coffee Cake
3 c flour
1/4 tsp.salt
1 c sugar
4 t baking powder
1 1/2 c milk
2 eggs
2 t vanilla
1/2 c butter, melted
Swirl:
1 c butter, softened
1 c brown sugar
2 T flour
1 T cinnamon
Melt the butter in a dish in the microwave while you mix the rest of the cake ingredients in a bowl. Slowly stir in the melted butter and pour into a greased 9x13 pan. Mix the ingredients for the swirl and just until combines. Drop evenly over the batter and swirl with a knife. Bake at 350 for approximately 30 minutes. Mix the glaze (below) when it comes out of the oven.
Glaze:
2 c. powdered sugar
5 Tbsp. milk
1 tsp. vanilla
Drizzle the glaze over the cake and serve warm.
