I'm in the middle of cleaning up the kitchen right now when I moved one of my recipe books and out fell my handwritten recipe for vegetable cakes. They sound really, really good right now too! I have grated zucchini in the freezer from our garden that will work great in these!
Vegetable Cakes
4 eggs
2 c grated zucchini
2 c grated squash
1/2 c grated carrot
1/3 c bread crumbs
1/3 c fresh basil, ripped
1/3 c parmesan
1/4 c grated onion
salt and pepper
Beat eggs stir in everything else and pour about 1/4 c in a hot skillet with a bit of oil. Cook until golden brown, flipping once.
