Homemade Whole Wheat Crackers

For many, many years I've been making my own version of Almond Thins  -  like "Wheat Thins" but easier on the digestion, very few carbohydrates and no sugar or preservatives.  However, I do have more 'cracker like' recipes in my draft files that I would like to play with - seeing if I can find a grain based cracker that is easily digestible as well as tastes great and is more healthy (and cheaper) than the boxed versions which have jumped in price at the store over the past year.

This morning I decided I really need to start publishing some of the recipes I have in my 'draft' mode - which is where I save many recipes until I try them.  My website is my own personal collection of recipes I use daily in our home so when I leave recipes in draft mode, I often forget to go 'digging' through them.  By publishing them, I make it easier for myself to find them!  So I will try to be better at publishing some of them... not only as a reminder to myself that I wanted to make them, but my readers might be looking for a similar recipe too. This is one that does not use yeast, so when I make it I plan to use a sugar substitute.

Whole Wheat Crackers

2 c whole wheat flour
1/3 c sugar
1 t salt
1/2 c. milk
1/4 c oil of your choice
salt or other herbs or spices for flavor

In a bowl, blend the dry ingredients;  flour, sugar and salt.  Add milk and oil.  Blend.  The dough will be crumbly but will come together in a ball.  Add additional milk or flour by drops to get the right consistency.   Divide in 2 portions. On a parchment paper lined baking sheet, roll the dough very thin.  Sprinkle lightly with salt or other flavors you prefer. Do the same with the second portion now or wrap tightly and refrigerate to use later. With a sharp knife or a pizza cutter, cut into individual crackers and prick with a fork in multiple places.   Bake at 350 degrees for approximately 12-15 minutes or until lightly browned.
