Homemade, buttery soft caramel candies

I've been making caramel candies since about 1995 but  I don't normally wrap mine and serve as candy, but use it in other recipes like my homemade Twix Bars and other goodies.  We relocated around the USA often, and when we live close enough to attend family Christmas celebrations, my Mother is the 'caramel' maker so my sister-in-laws and I bring other goodies.

This year we are 1000 miles from extended family and being in the mood to put homemade caramels on our Christmas trays this year, I decided to add caramels to my list over 20 cookies and candies I'm making.

This is the homemade caramel recipe I use for soft, chewy candy like caramels (not the same caramel I make if I'm using it in a Twix or other bar.  This recipe is not only soft and chewy but has a buttery, soft flavor that is perfect on its own although I like a more 'caramel' caramel for bars.

This makes a delicious soft caramel that melts in your mouth and is easy to chew - not the hard caramel that rips out your teeth fillings.

Caramel Candies

5 T butter
1/2 c sugar
1/2 c brown sugar
1/2 c corn syrup
1/2 c sweetened condensed milk

Microwave this mixture for 7 minutes - stirring every minute or two.  Pour into a greased glass dish.  Cool and cut.  Wrap in pieces of plastic wrap, parchment or wax paper.
