While I didn't accomplish even a tenth of what I would have liked to have, it was a wonderful week none-the-less. While I found time to do some house projects like painting interior doors, organizing the closet and working on restoring old family photos, I also was able to sit back and just talk to my kids and reconnect on a level that our schedules normally don't allow. Discussions with my 13, 17 and 18 year old's touched on everything from what was going on around school, to the new car one of their friends just bought, cool car accessories, all the great traits about a new girl my son is interested in to mundane things like being out of my daughter's favorite 'gummies' for snacks. The laundry isn't completely caught up but it's down to 2 more loads. The carpets didn't get professionally cleaned but my family got some really delicious meals and homemade baked cookies. It was a 'give and take' kind of week.
Last night my husband was thrilled to come home from work and see I had made even more cookies; Chocolate Peanut Butter Chip Cookies. This is a recipe I've been making for about 15 or 20 years but I change the chips in them, using whatever I have on hand. Sometimes mini M&M's, other times chocolate chips, toffee chips, white chocolate chips... anything you want! Last night it was peanut butter chips. Yum! I didn't take a new photo of the cookies last night as I've already photographed them a number of times over the years. Here is a picture of them from my files from a few years ago to show you how they look.
1 c real butter
2 c sugar
2 eggs
2 t vanilla
2 c flour
3/4 c cocoa
1 baking soda
1/2 t salt
2 c peanut butter chips
Cream the butter and sugar. Add eggs and vanilla. Don't over mix. Add the flour, cocoa, baking soda and salt all at once and slowly start the beater to mix it in together. Stir in the chips. Drop by tablespoons onto an ungreased cookie sheet. Bake at 350 for 8-9 minutes. They will be puffy and moist when they come out of the oven. Let them set for 1-2 minutes, remove from the pan to cool completely. They will flatten as they cool. If you like a crisp cookie, bake them 1-2 minutes longer.
