Easy, Homemade, Almond Truffles

Our household loves truffles. I started to buy them when we used to live right down the street from a Harry & David outlet store but soon started making them myself. The photo above is of the truffles my daughter made for her boyfriend last Valentines Day - they were amazing! She made him caramel and mocha flavors but when and if I have a truffle (because I don't generally care for chocolate) I like a nice almond truffle.

An almond truffle with a hot cup of coffee - doesn't that sound fabulous? 

 

Almond Truffles 

1/2 c evaporated milk
1/4 c sugar
2 cups milk chocolate chips
1/2 t almond extract
1 c finely chopped toasted almonds 

Combine evaporated milk and sugar in small saucepan. Cook over medium heat until mixture comes to a full boil. Boil 3 minutes, stirring constantly. Remove from heat. Stir in chips and almond extract, stirring gently until smooth. Chill mixture about 45 minutes until it can easily be shaped into balls. Roll into the crushed nuts. Chill until ready to serve.
