Today's Lunch: Cheesy Garlic Bread w/ Spaghetti Sauce to Dip

Today for lunch I was craving garlic bread.  I had a loaf of French Bread out and ready to be made with dinner tonight but I couldn't get it out of my head and nothing else sounded remotely as good as garlic bread!

I had an 'ah ha!' moment when I realized my husband AND my daughter would both be gone tonight at dinner time so it didn't really matter when I made dinner as they would eat theirs when they got home from work.  I could make the cheesy garlic bread now and enjoy it for lunch!

I didn't use a recipe, but I've posted many versions of this over the years if you want to search for them in the search box to the right.   Here is what you do - adjust some of the amounts to your own preference;

Cheesy Garlic Bread

1 loaf French or Italian Bread, sliced
8 oz. cream cheese
1 stick butter
1/4 c mayonnaise
1/2 c Parmesan cheese or mozzarella cheese
1 t garlic salt
2-3 t minced, fresh garlic

Soften the butter and cream cheese in a bowl in the microwave.  Stir in the rest of the spread ingredients.  Spread evenly on the slices of bread.  Bake in a 375 degree oven until golden brown for a crunchy garlic bread or place under the broiler for 3 minutes for a softer bread with a golden top.
