Sour Cherry Jelly

3 pounds red sour cherries
1/2 c water
7 c sugar
6 oz. pectin

Wash, stem and crush the fruit. Add water and bring to a boil. Reduce heat and simmer 10-12 minutes. Extract the juice with a jelly bag. Combine 3 cups of juice with the sugar. Heat until dissolved. Bring to a boil and remove from heat. Add pectin. Stir and remove scum from top. Pour into sterilized jars and seal. Makes about 7 8-oz. glasses of jelly.Print Friendly and PDF
