Today I thought I'd look through the pantry and get ready to pack away some of the sugar-laden items hiding there. I had bought a yellow cake mix to make a certain coffee cake... but I never did. And I had half a white Funfetti cake mix in there too. Cupcakes? A cake? Eh. Quicker and easier would be to whip up some cake mix cookies. Three ingredients and we were good to go! Cake Mix Cookies
1 dry cake mix
1/3 c oil
2 eggs
Mix the cake mix, oil and eggs. Beat well. Form into balls, flatten slightly and bake on parchment in pre-heated 375 degree oven. Cool slightly and frost to decorate if you wish.
