Homemade Stuffed Crust Deep Dish Chicago Style Pizza

This past weekend we enjoyed an incredibly yummy pizza.  Now, pizza is pizza and other than your dough recipe (mine is posted for you below), you build it as you like it.  This post is perhaps just to remind you that maybe you should make a pizza for dinner one night this week.  And make it a stuffed crust!!



Homemade Stuffed Crust Deep Dish Chicago Style Pizza

1 large pizza dough recipe or dough ball  (I make homemade - recipe below)
Mozzarella Sticks - you will enough to lay around the diameter of your pan
Pizza Sauce
Mozzarella and other cheeses you like on pizza
Toppings of your choice

You don't have to use a deep dish pan - you can use a regular pizza stone or pizza pan, but if you want 'deep dish' pizza, you need a deep dish pan.  However, you can easily make a stuffed crust pizza in a flat pan too!  I do it all the time.  

Oil your pans.  Roll and spread your dough out about 2 inches larger than the pizza pan or pans you will be using.   Unwrap your mozzarella sticks if they came in plastic, and lay them end to end around the edge of your pan, on the crust.  Now grab the dough, pull it over the cheese stick and press to seal.  Continue all the way around the pan.

Add your pizza sauce and toppings.  Bake in a 425 degree oven until your pizza is golden brown on top and the crust is cooked through.  This takes up to 40 minutes for a really deep dish pizza with a lot of toppings!  Serve warm. 




Cheese sticks are rolled into the edges and sealed.


Topped with lots of goodness and ready to go into the oven to bake!



Pizza Dough

1 pkg. (2 1/4 t) dry active yeast
1 T sugar
1/2 t salt
1/4 c dry powdered milk
1 1/3 c warm water

Put into the bowl of a mixer or mix by hand. Wait 2 minutes.

2 T olive oil
4 c flour

Knead in a Kitchen Aid style (heavy duty) mixer 5 minutes or knead 10 minutes by hand. Let rest 10 minutes.

Depending on the thickness of the pizza you like - Use in 1, 2 or 3 greased, average 'home' sized large pizza pans Let raise about 1 1/2 hours and top with your choice. Bake at 400 approximately 16-25 minutes depending the size of your pan and how many toppings you have on it. Bake until golden brown.
