About 10 years ago I started to make a spinach casserole our family really loved and when I saw this artichoke casserole recipe I saved it to my files as we really love artichokes too. It got lost in the drafts and never made. I'm putting it out as I will never make it if I don't post it and 'remember' it when I'm brain storming recipes!
Artichoke casserole
2 cans artichoke hearts in water
2 cans french style green beans
1/2 c olive oil
1 1/2 c bread crumbs
1 c romano cheese
1 small onion
2 cloves garlic
Saute onions and garlic in olive oil. Add beans and artichokes, chopped and drained. Simmer 5 to 10 min. Mix in the cheese and bread crumbs. Bake at 350 for 20-30 minutes.
