Puring my draft recipe files: Leeks in Cream

Back in the spring of 2008 I wanted to try to start eating more leeks.  They never really caught on in our family though. This is so simple and uses such a small amount of bread crumbs and cheese that I think I might have to give it a go! 

Leeks in Cream

4 Leeks - trimmed and sliced diagonally into 3/4 inch chunks
3/4 c cream
2 T dried Bread Crumbs
2 T grated cheddar cheese
salt and pepper

Boil leeks in salted water for 5 minutes then drain well. Pour into a shallow heatproof dish. Pour cream over and sprinkle with the crumbs, cheese and salt and pepper. Bake at 375 degrees for 15-20 minutes until bubbling and golden brown on top. Cool 5 minutes before serving.
