Homemade Oat Bran Cookies (Or; Oatmeal Cookies!)



All day long I had a craving for a chewy oatmeal cookie.  No raisins.  No cranberries. No chocolate or nuts.  Just a nice, sweetened with brown sugar, oatmeal cookie.  Opening my pantry I found I did not have any oatmeal but I did have a box of Oat Bran.  Perfect!  Time to make some cookies!  In the end I sort of made up the basic recipe and I am now a huge fan of using oat bran instead of oat meal.  The smaller sized flake is really a great plus in the cookies.  Tastes the same, but I love the smoother texture. 

Oat Bran Cookies
(You can use Oat Meal if you you'd like!)

3/4 c brown sugar
1/4 c white sugar
1/2 c shortening
1 egg
1 t vanilla
1 c flour
1/2 t salt
1/2 t baking soda
2 c oat bran flakes

Cream shortening and sugars.  Add the egg and vanilla.  Add the dry ingredients.  Drop or scoop your favorite sized cookie onto a baking sheet.  Bake at 350 for 10 minutes.  I made mine about 3 1/2 inches across (walnut sized dough drop) and I got 12 of this size.
