Homemade Wheat and Oatmeal Pancakes

Since I posted those delicious oatmeal cookies (made with oat bran) yesterday,  when I saw this recipe sitting in my files this morning I decided to continue with the oat theme and post it.  I love this one because it not only uses oat meal (which you can use oat bran for) but whole wheat flour, wheat germ and buttermilk.  Yum!  Top it as you wish - I prefer butter and a sugar free syrup but feel free to use berries and whipped cream or whatever you like!

Homemade Wheat and Oatmeal Pancakes


1 cup quick oats or oat bran
1 cup whole wheat flour
1/4 cup wheat germ
1/4 cup dry milk
1 teaspoon baking soda
1/4 teaspoon salt
1 T brown sugar
2 eggs, slightly beaten
2 c buttermilk
1/4 c canola oil

Stir or whisk dry ingredients in a bowl.  Add the rest of the ingredients and stir just until blended. Pour pancakes of your preferred sized on a hot greased griddle. Cook until edges are dry and they have tiny air bubbles popping. Turn, and cook until golden.  Serve warm.
