Vinegar and Cucumbers

An ode to Grandma... summertime and cucumbers; the stuff memories are made of. As a child I remember my Grandma H making cucumbers two ways. One was the creamy cucumbers that I've posted previously with sour cream and mayo and the second was a style that I admit, I didn't care for. As a small child I would rather have my cucumbers sliced, plain with a bit of salt sprinkled on them. But, as an adult? I totally love the vinegar cucumber side dishes.

3-4 large cucumbers
1 t salt
1/4 c white vinegar
1/4 c cider vinegar
1/2 c sugar


Peel the cucumbers and slice thin into a bowl. Place the cucumbers in a colander and sprinkle with the salt and set over a bowl. Refrigerate for an hour or two. Drain and squeeze gently to remove liquid.

In a ceramic bowl, combine the white vinegar, cider vinegar, and sugar. Stir until the sugar has completely dissolved. Add the cucumbers and stir to thoroughly combine. Serve cold - great with burgers, bbq or grilled chicken.Print Friendly and PDF
