Cheesy Potatoes for Easter?

Judging from the hits I get by people looking for Cheesy Potatoes, you all must be getting ready to make them this weekend! I have already posted a couple recipes for them and have also made it clear that this is a recipe you can change almost anything in and it will still turn out yummy! Don't be afraid of it. Just throw it together and leave out what your family doesn't care for and throw in what they might! LOL.

I've made this one once in awhile since 1999. It's a great one and is especially delicious and perfect with baked ham.


Another Cheesy Potatoes Recipe

32 oz. frozen hash brown potatoes
1 onion, chopped
1 can cream of mushroom soup
16 oz. sour cream
2 c grated cheese (cheddar, swiss, jalapeƱo, Monterey jack... whatever you have!)
1/2 c (1 stick) melted butter
1 1/2 c crushed regular corn flakes


Preheat your oven to 350. Butter or grease a 9X13" pan. Break up the frozen potatoes and spread them on the bottom of the pan. Top the potatoes with the chopped onion. Mix the soup, sour cream and cheese together and pour over the top of the hash browns. Mix the melted butter with the corn flake crumbs and spread over the top of all. Cover with foil and bake 50 minutes and then remove the foil and continue baking for 15 minutes until golden brown.Print Friendly and PDF
