Cherry Cheesecake Balls

While looking through my files of recipes I saw this one and my mouth almost started to water! The thought of cherry cheesecake balls made with almond extract sounded so good! I've not made this one before, as it's just been sitting in my files for about 2 years now. Since I have hundreds of cookbooks, cooking magazines, file boxes, hand written notebooks and binders full of cut out, clipped and ripped recipes it's no wonder a few will go unnoticed once in a while! Ha. I seem to be on a cheesecake kick lately don't I? Hmmmm. I do love cream cheese!

Cherry Cheesecake Balls

8 oz.cream cheese softened
1/2 cup sugar or Splenda
1/2 t vanilla or almond extract
1/2 cup coconut
8-10 chopped maraschino cherries
1/2 cup fine graham cracker crumbs

Mix the cream cheese, sugar, vanilla, coconut and cherries. Drop by teaspoons full into graham cracker crumbs and roll into balls. Chill for at least 2-4 hours.Print Friendly and PDF
