One of my favorite foods is fish... seafood. Almost any kind - oysters, crab, lobster, catfish, shrimp, salmon; name almost any seafood and I probably love it. My husband doesn't share my affinity for 'fishy fish' so going to Long John Silvers (which I LOVE) is something he won't do with me and since I'm not crazy about going out on a date by myself I get to go to Long John Silver's about once a year. Let me pause a moment and be sad about that. Sigh. OK! So... if you are like me and crave batter fried fish once in a while, or have a little bit of "London" in your blood and crave fish n' chips... here you go. I have another recipe for batter fried fish as well that tastes almost exactly like Long Johns. Yummmmm I may have to post that one this week too!
Fried Fish
2/3 C Self-rising flour
2/3 C Beer or lager
4 Pieces of Cod fillet (skinned, about 4 oz each)
Oil for deep frying
Sea Salt and fresh ground black pepper
Malt Vinegar
Blend the flour, beer and 1tsp salt in a food processor or blender until smooth. Pour into a shallow bowl. Heat about 1 1/4 inch of oil in a skillet on medium high heat. Season the fish with the salt and pepper, dip into the batter and lay carefully into the hot oil. Deep fry in 2 batches for 3-4 minutes until golden brown and crisp. Drain on kitchen paper towel and serve with the malt vinegar to sprinkle on the top.
