I've been a fan of iced coffee for almost 10 years but have never really found a recipe for one I loved as much as the versions I would purchase at a coffeeshop or even McDonalds. The home versions were good, great even, but still not 'just right'.
I had not really tried to make any for awhile now. Not a big deal when there are McDonalds and coffee shops every block or two in each direction. But while flipping through recipes I was craving an iced coffee and decided to read some of them more closely. I found one that intrigued me. Instead of using white sugar or Splenda, this one used sweetened condensed milk. I loooove sweetened condensed milk - which is weird since I have a natural aversion to both sweets and milk! I tried it this week with a few little tweaks of my own in there and I love it! Not only that but my 15 year son loves it - and I actually had to hide the drink in the back of the refrigerator behind the milk, juice, Kool Aid and everything else in hopes that he won't drink it all and will save some for me!
Iced Vanilla Coffee
About 6-8 cups fresh brewed strong coffee (10 cup serving size in the carafe)
1-(14 ounce) can sweetened condensed milk
2 T vanilla extract
ice cubes
Combine brewed coffee and sweetened condensed milk into a large pitcher; stir thoroughly until coffee and condensed milk is blended together. Stir in the vanilla extract. Pour flavored coffee into glass that is filled with ice cubes, or refrigerate until coffee is chilled, then serve.
