Grilled Chicken Dry Rub

I was looking through my recipes trying to decide what to make for dinner tonight when I saw this dry rub recipe for grilled chicken. Tonight is going to be -40 below zero wind chill so I don't think I want to be standing outside on the deck grilling, but just the thought of this delicious chicken was enough to bring me to my 'happy place' which, in my imagination was standing next to a pool side grill in Florida with the sun shining on my back and this chicken in front of me over the flames.

As I come back to the present... (brrr) I'll pass on this one for tonight but I wanted to type into my online collected recipes to save for that sunny day 6 months from now when I won't mind standing on the deck in front of the grill.



Grilled Chicken

2 T salt
1 T fresh ground black pepper
1 T brown sugar
2 t garlic powder
1 t lemon pepper seasoning mix
1 t chili powder
1 t cayenne pepper
1 1/2 t cornstarch
1 1/2 t onion powder

1/2 cup real butter, room temperature
3-4 lb. chicken - whole or breasts

Combine the dry ingredients in small bowl. Mix 1 tablespoon of the dry rub with the stick of real butter. Set aside. Use the rest of the dry rub to rub into and cover your chicken pieces. Cover and chill for at least 2-3 hours.

Grill the chicken for 25 minutes on the underside, flip and an additional 20 minutes skin side down. Continue flipping and cooking until completely done and not pink. Place on a serving platter and place pats of seasoned butter on the chicken to melt and impart more flavor to the poultry.Print Friendly and PDF
