Taco Salad

There are quite a few things we make for meals that I don't use a recipe for, and honestly, don't think anyone would, could or should use a recipe for. It's just one of those things that you throw together based on the amount your family will eat and what their tastes consist of. Taco Salad is one of those.

So why would I mention it here and put a 'recipe' for it? Because it's also one of those things that you forget about making! LOL. Sooo many times I'll flip through a recipe book or find a list of menu idea's for the month that I've wrote in the past and tucked away in the front of one of my recipe folders and I'll say to myself "Oh yeah! I forgot all about that! I have to make that!"

So todays post is for Taco Salad. Obviously you will leave out what your family hates (black olives not a favorite? Don't put them in!).

Taco Salad


A mixture of chopped Romaine, green leaf and/or iceberg lettuce
ground beef or turkey made as directed on the package of seasoning
chopped onion
1 can black beans, rinsed and drained well
chopped tomato
sliced black olives
Crushed Doritos
shredded cheddar cheese
1 can enchilada sauce
3/4 c Catalina salad dressing
Salsa
Sour Cream


Chop all the lettuce, add the onion, beans, tomatoes, black olives, cheese and nacho chips. Mix the enchilada sauce and dressing and toss the salad with it. Serve with a side of salsa and sour cream for people to use as they wish.Print Friendly and PDF
