Cream Cheese Zucchini Bread

I really like my original zucchini bread recipe, but I'm always on the look out for new recipes (of course!). Recently I tried a new banana bread recipe that had cream cheese in it. When I saw this zucchini recipe that also had cream cheese in it, I figured it might be worth while.

Cream Cheese Zucchini Bread

3 eggs
2 c sugar
1 c oil
1 t vanilla
8 oz. cream cheese
2 c flour
1 t soda
1 t baking powder
1 t cinnamon
1 t salt
1/2 t nutmeg
2 c chopped walnuts
2 c shredded zucchini

Heat oven to 350. Grease and flour two loaf pans. In large bowl beat eggs, sugar, oil and vanilla until smooth, then beat in softened cream cheese. Blend the dry ingredients together by whisking in a large bowl and gradually beat the dry into the wet. Lastly, fold in the nuts and zucchini. Pour into the two prepared pans.

Bake at 350 for approximately 1 hour - 1 1/4 hour until the center is done (I test my breads using a butterknife inserted into the center as a toothpick doesn't go deep enough). Remove from oven and allow to cool in pan for 10 minutes. Turn out of pans and allow to cool completely. Wrap in plastic wrap and then foil and refrigerate overnight for best flavor the next day.Print Friendly and PDF
